100 Dungeons to many? less?

I'm all for a lot of dungeons, but not at the expense of a poorly spaced environment. In OB, for example, you couldn't toss a rock without hitting another dungeon door, which didn't feel like exploration at times. I'd like well-designed and well-dispersed dungeons as opposed to finding one around every tree and boulder.

One would think that there would be a good bit of caves tucked away in mountains. Either at the base or hopefully we'll see some mountaintop caves.

I think 500 would be enough (just take those 100 dungeons/caves and multiply by 5, make some minor changes, while remaining same style)

No. That's exactly the approach they used in Oblivion and it got really boring after awhile. I'd much rather there be fewer dungeons that are truly unique than hundreds of them that just look pretty much the same as the last one you explored. This approach is most definitely the wrong way to go.
