I generally stick mostly to first person in Morrowind and Oblivion, using third person only to look at the character I created on occassion, the third person view in those games is just not very well designed, and they work much better in first person. Even if Skyrim succeeds in delivering a third person view that's actually suitable for playing in, though, I'll still probably stick mostly to first person, because I've come to see the Elder Scrolls as a primarily first person game with the option to play in third person, and so I think I'll stick to first person unless I want to admire my character.
As for my choice of six, I play both sixes, depending entirely on what I feel like playing at the time, I've always done this in games that give the player such an option, and expect to continue doing so. Some say they only play their own six because they have trouble role-playing the opposite one, but I've never had problems with that myself. I can feel comfortable playing either six. In the end, I want to role-play as someone I'm not in real life, if I just role-play as myself, then that's just boring, and a member of the opposite six is something I'm obviously not in real life.
It seems like all the people who play as females also play in 3rd person. I wonder why?
Maybe for some people it's like that, but for me, whether I'm playing a male or female character doesn't effect whether I use third person or not. If I want to stare at a woman's back, there's plenty of websites online that can satisfy that desire, so there isn't really any need to play the game that way. And in any case, since most of the time my character's will be covered in armor or clothes the only difference between how their backsides will look in third person depending on whether they're male or female is the proportions.
