i am aware that sidekicks cann't be cured of poision and stimpacks will do damage until the poison effect wears off. what about food items, would that kill them too during the poison effect?

Companions won't use food items, the only thing they'll actually use is Stimpaks. If you're playing on a PC, there is a mod that will allow you to cure their poison using Anti-venom.
