About the Armor Cap.....

I know it's 500 something, if I go over it, it doesn't matter? My armor will protect time the same as of I had it at the armor cap?

Anything over 667 (with hidden bonus of 25 per piece included), be it 668 or 10,000, gives you 80% less physical damage on Adept.

No.

Your weapons ideally should be within 20-400.

Some people get their weapons to over 1 million.

According to the section 'Armor Cap' on this page: http://www.uesp.net/wiki/Skyrim:Armor the cap is 567. Before I figured this out, I was happily walking around in heavy dragon plate with an AC of 1100. Now I just wear the Arch Mage's robes and cast the Alteration spell Dragonskin which matches the armor cap for the duration of the spell. (Yes, it does get tedious casting it over and over so I may ditch this strategy in the near future).
