The micro detail in the plants and rocks, mostly.

But in all seriousness, the fact that there is more wildlife in Skyrim versus Oblivion's deer and wolves. Immersion FTW!!!

I really liked the fox chasing the rabbit in the demo and I sincerely hope there wasn't too much 'for-demo-purposes-scripting' going on there.

I thought Oblivion had great graphics until I saw Skyrim's screenshots and trailers. WOW! The artwork is frikkin AWESOME!

The ecosystem. Basically the radiant AI. The thing about every single other game (To my knowledge) is its not hard to see that every NPC exists because you exist. While its a lot easier in Skyrim to forget that little tid bit. Like, the NPCs all do things whether you exist or not. Wolves hunt as opposed to wait until you specifically walk by. Thieves thieve. Guards guard. Etc. It feels like more of an accomplishment if I make them take notice of me when they don't auto have it from the get go.

Probably would have to be the feel of the world. It feels much more compacted compared to Oblivion, and probably even Morrowind. It feels like there is always something interesting or at least nice environment every time you turn your head. And from what we heard from the people who played the demo, their really is stuff around every corner. They really filled up the world this time.

When the dragon picked up the giant and dropped him in Todd's demo, I thought that was the coolest thing in the world.

Although the radiant AI in Oblivion's demo was VERY exaggerated, hopefully its not too bad this time around.
