Right now, there's been no clear word on the subject, so we can only really speculate, and really, nothing short of official conformation or seeing a screenshot of the inventory screen displaying all items a character has equipped will tell us anything for certain on the matter. Though I'm guessing that for rings, one can still wear one on each hand and one amulet as that's a rule that pretty much every RPG that lets you wear such items adheres to, in fact, I don't think I've seen any game where I could wear more than two rings by default, and I doubt Skyrim will break from this tradition. The real question is how many armor slots there will be, I think we can safely assume it's not going to be like Fallout 3 and New Vegas where it's just full suits and helmets, at least, but still, it's hard to say what it will be like. Maybe they'll stick to Oblivion's setup, or maybe they'll go back to how Morrowind did it, maybe they'll go for something in between (Say, having pauldrons seperate from the cuirass but not eperating them or gauntlets into left and right slots.) or maybe they'll go even further, but the last one, I think, is doubtful.
