40/50/10 magicka/health/stamina but I actually do 50/50 with no stamina.

Do the quest for Peryite, 'The Only Cure' and get the Spellbreaker. Best shield in the entire game. Need to be level 10, and some poison resistance can help as well.
I dislike that shield. I can see why some people like it, but at higher levels the ward breaks against stronger spells too easily and you get stagger-locked.

Okay, first off, really read what the various perks do for you, and how you think that you can use them.

Essential skills: One-handed, Block, and your choice of either heavy or light armour, plus you seriously need to think how you will repair your damage/injuries. Early on, it can get expensive buying potions, so you then have two options, either concentrate on restoration spells, or take up alchemy to make your own potions. The alchemy option is a good one, because even if you don't take perks, you can end up making a heap of high-return sellable potions which you can then sell off to buy your health and stamina potions and make a tidy profit. For the effort that goes into it, alchemy is a money for jam skill that doesn't require any perk investment to make you a motza.

I would also suggest that you take the smithing skill, because that will allow you to improve your armour and weapons, and again to turn a profit in the early stages. In this game, you can reach the maximum armour rating in any set of armour, so you don't necessarilly need to take all the perks, only those up to the armour type you want.

It's your choice as to whether you enchant. Personally, I don't use enchanted weapons (except for a couple of specialty items), because I like to see the kill animation clips...however, my armour has skill boosts on it: Magicka and magicka regen on the helmet, health regen and stamina regen on the curaiss, muffle and boosted carry capacity on the boots, and boosts to one-handed and block skills on the guantlets, plus I carry a range of rings and necklaces with various skill/ability boosts for a range of circumstances.

As far as your stats are concerned, once you hit a certain stage in the game having a massively high health isn't important, but having a high stamina and stamina regen rate is. You need to balance out how you approach that. The reason for the stamina issue is that when you block, you lose stamina when you get hit, and if you use your shield offensively for bashes and power bashes then you chew up stamina as well. And in all honesty, those block perks and abilities are some of the most useful and effective in the game.
