I like http://www.nexusmods.com/skyrim/mods/3829/? It allows you to independently adjust health, melee damage, magic/breath damage, armor values, and resistances in-game, through an MCM menu. It also comes bundled with Deadly Monsters, which allows you to do the same thing to all the other enemies in the game.
