I think I caught the courier putting something in a chest somewhere in the wilderness. It was a casino chip.

I've caught him on the road between towns. Ive followed him. He just goes to another town and wanders around.

Once killed a "friend" (I wanted to feed my sword and it was easier to become his friend than click like on facebook) and courier showed almost 10-15 seconds later to give my heritage.

Courier is decendant of psychic guards from morrowind (he has mark and recall or over 9000 speed).

The one who delivers stuff to you usually just stands there and acts all defensive and confused when you try and talk to him, but there's at least one other courier delivering a letter about shimmermist cave to ... who knows. I've never had the patience to follow him, I always just kill him, take his note and then go to shimmermist cave.

Honestly, when he catches me in town i've noticed he just hangs around town for a while. If you try engaging in conversation, You'll get something like "nope, got nothing for you now", or something along those lines. Not sure what he does when you catch him outside of town, never bothered to follow him.

I always see a Bosmer courier in random areas along the road. He says "Important deliveries to make. No time for chatting." Then he takes an arrow in the head.

When talking to a courier in a city he says "Nope. Sorry. Nothing."

'I used to be a courier then I took an arrow in the head.' Wait... Oh, yeah, it can happen in Skyrim.

I knew it was something along those lines. At least I wasn't too far off the mark.
