I agree that it's disheartening for enchanted items found at low levels to be so much better than what the player can make.
I'd also like to see a greater variety of caster-oriented enchants. Natural magicka regen needs to be at a level where 100% cost reduction for a school is less overwhelmingly attractive. Playing a caster I'd normally want a mix of magicka management, resistance, and output increasing enchants, with maybe a little left over for things like feather enchants--and for settling on the optimum balance to be an interesting challenge.
I really haven't found either smithing or enchanting unbalanced, because I've leveled them using only found materials. I agree that you should only be able to level it so high using iron though.
