After completing the MQ I had one of my characters settle down in Markath, RPing that he had become an honorary guard and acted as a ranger for the hold; he wears the guard uniform and goes out into the reach and clears the area of forsworn and patrols the roads, sometimes being out for several days.

That's the closest I've come to RPing a guard

I've done a bodyguard type of build an followed the caravans an farmers an kept them save until I lost a charge to a Dragon an ent from bodyguard to sorry as hell town drunk who still ain't found redemption for his own guilt.

That sounds more fun than being a guard actually, at least you'll go on an adventure when someone drinks you... and a few hours after that.
