I must've lost a follower at some point and I've waited days tried to get a new follower nothing. It's extremely annoying. Any resolution aside from re-loading from like months ago

I don't think there really is unfortunately. Some people have claimed that initiating a quest with the Companions, which forces one of them to accompany you and then finishing that quest up fixes it, but I have no way to confirm or deny this, since I've never experienced the follower bug you are describing.
