I can answer this with my own personal opinion.
The few mods I've tried were fairly interesting, but I prefer a game the way the developer makes it. Not the way others want it. If the game isn't good enough to play through in it's base form, then why buy it in the first place? I would rather enjoy it how it is, then have to mod it to enjoy it. :\
Secondly, my PC is in my living room, my 3D-HD TV is in my bedroom (I rent an upstairs apartment). I don't want to drag my PC in here just to play Skyrim, when I can easily play it on my Xbox with a comfy controller.

And finally, there's not gonna be a major difference between the platforms (apart from PC mods). The graphics will be tweaked up from 360 on, but the game itself is the same. Plus I can always sell Skyrim sometime in the future, if i absolutely need to.
Just my own personal opinion. ^_^
