I confess i'm a enchantment addict i mean a soul and health stealer war axe, a bow that paralyzes your target and lights them on fire... Ooooh so many choices so little time. My personal favorite is a soul and health stealing bow though i think the bethesda fellows could've added a few more oodles like Frenzy enchanment.

I'd say yes. I have 3+ full sets of apparel that are all double enchanted for different, or even slightly different, play styles.

I jumped through hoops to maximize my enchanting potions, making multiple sets of alchemy gear and going to Apocrypha to change The Sallow Regent effect every step of the way. I know I could make the potions, and as a result the enchantments, a bit stronger, but I feel I've reached a good cap for my play style.

Nah I dont really go overboard. Since I'm primarily an archer, I use soul trap 99% of the time. I'll throw paralyze and chaos on a 1H weapon.

Too much enchantments can be dangerous. M'aiq once had two enchantments and burned his sweetroll.

Nah, I tend to wait until I can make the really powerful enchantments before I waste my soul gems. Silly and unnecessary I know but I can't seem to help it.
