Mass Effect 2 was dumbed-down, but a lot of it made sense. Actually playing Mass Effect 1, it was really a cover-based shooter that used RPG elements to compensate for it's weak shooter mechanics. Mass Effect 2 played much, much better than Mass Effect 1, but I didn't find it as enjoyable, because there was no thrill to exploration (Both in terms of the galaxy itself, and exploring things like equipment builds).
As for Skyrim, I'm not really worried. While I would have liked attributes to be tweaked to better serve the game, I don't mourn their loss, as they didn't add much to the game itself, at least not anymore than the perks will. The real test will come when we get more word of things like Equipment function, and glimpses of the world detail. I hope someone on the team is going through Morrowind right now, to see how to design dungeons and world-spaces that, although totally static, seem alive.
Also, I want strongholds back! I just remade the Hlaalu stronghold on the Odai Plateau, and I forgot how great a series of quests it is. Intentionally written into it or not, while doing the quests, you can't help but have that sense of "I have arrived", as in, you are really somebody among your chosen Great House.
