They probably ambush, and use chitin spears, bows, and axes. The things they would hunt would probably be every outdoor beast you see in MW, either for food, hides, and/or materials. Not sure what time they would actively hunt.

Of course, this is only the Ashlanders in Vvardenfel. Mainland ones probably the same, just different creatures.

Track, stalk, ambush their prey, and hunt in groups probably using stealth to gain an advantage.
The element of surprise will certainly help, especially since most ashlanders seem to be armed with chitin weapons and armor which aren't very heavy weaponry and armor.
They would probably just hunt local creatures or anything they run into, or perhaps the occasional outlander, since ashlanders don't seem to like them.
And maybe they go on long hunting trips at a time, set up camp and maybe a little bit of foraging while they're at it.

I hunt Ashlanders with a steel mace, usually. The fast ones take a bow.

There is concept art of them pulling netches to the ground with harpoons and ropes.

They've never attack an unarmed traveller if they didn't break clan laws or customs.

I'd imagine they do this with the silt striders you see around the Ashlands, as well. There's no other way they could hit the ground without going to either side.

They go on long hunting trips, as that's stated when you ask the women of the Zainab Tribe about trade goods with the Telvanni. But I doubt they set up camp, as there's no need if you're fast and can cook what you find over lava. And they wouldn't need to leave their camp to go foraging, as there's usually a lot of plants around their camps that look like they can be eaten.

They could follow something until it drops death from exhaustion.
