BACON is the best part of the COW

Post » Tue Jan 14, 2014 1:44 am

I love bacon. I try not to eat it. The doc told me to start watching my cholesterol so I really cut down on it.

This old timer I saw on the local news once claims that he eats bacon, smokes a cigar and has a glass of whiskey everyday. He was like a 100 or something. Could bacon be benifical and prolong your life span?

I can't decide what's better? Bacon and Eggs, a BLT or a big Juicy Cheesburger topped with bacon. Ever get the thick sliced stuff? Do you like your bacon crunchy or a little chewy? What do you do with your bacon grease ? We were saving it for a while . Hell if I know why but there it sat in a big tomatoe can untill I finally threw it away.

I thought that old man whiskey and bacon thing was a joke.

Call me a heretic but I don't really eat bacon that often and I wouldn't really go out of my way to eat it.

I prefer my bacon at the perfect balance of soft and crunchy.

Thin sliced is also my preference.

I didn't think that was significant; he seems to like using a lot of CAPS in his titles.

What about ham?
"No"

"What about bacon?"
"No"

"What about pork chops?!?"
"Dad, those all come from the same animal!"

"Suuuure, Lisa. Some wonderful 'maaagical' animal."

Anything in Moderation is OK.

As for Bacon, I get the Center Cut, ideally from the butcher counter, and it's super lean. In fact, I sometimes have to add some fat if the dish called for using the bacon drippings from cooking up the bacon if I go this route.

As for cooking it, I do so in the oven, on a rack in sheet pan. Fat drips off, bacon crisps up nicely. I like a little crunch on the bacon, but since I use the lean stuff, it never gets crispy like the rashers that are all fat (Oscar Meyer, I am looking at you). Put the bacon on the rack in the pan, put the pan in a cold oven, set the temperature to 400 and the timer to 21 minutes. Timer goes off, you got bacon!! And no mess to clean up if you lined the sheet pan with foil before you put the rack on it.

Remember to pour the drippings off to use in some other dish later on when you want bacon goodness without cooking more bacon.

Has anyone tried turkey bacon? It's texture and taste is interesting to say the least.

The store I shop at has 'bacon ends and pieces'. They're like half the price of regular bacon and the only difference is that they aren't the nice even strip shape. Perfect for BLTs, which we eat a lot of. I have no intention of getting old so health issues are not a factor.

:yuck:

I would rather have two slices of the good stuff than have to eat a portion of this. Granted, the last time I tried Turkey Bacon was the early 80's. Maybe it's gotten better since then.

Nah, Pork Fat is a thing for a reason.

It's got a faux-chewiness to it that tricks you into thinking it will be good, then it simply breaks into chunks while chewing making it more difficult than anticipated.

A lot of the substitute meals now today are so much better than they were 20 years ago. I remember when veggie burgers came out, they were horrible. They've improved them and made a lot of varieties and they're delicious now.

Ground meat of choice? Turkey. (85/15 or 90/10) Great for making homemade turkey burgers.

Turkey or chicken sausage? Yes please.

That's not to say I don't like the original because and absolutely I do. However, variety is the spice of life and the alternatives out there are much much much better than what they used to be. I don't want to convert anyone, but if you give it a try and like it, you've just given yourself another meal option.

The trick imo is to not try to make it taste like pig bacon, but actually try to get the turkey flavor out of it. Whenever a company makes an alternative product and attempts to make it taste like the original, it almost always turns out bad. Just let those natural savory flavors come out, it's better for the product and you don't get some odd taste that doesn't taste like pig OR turkey.
