Beehives (wasp/hornet nest):
-usually in a tree (though not always). Never too far north, they only thrive where flowers can bloom.
-You can shoot it down with an arrow (or spell), and the bee's will unleash their fury on those around the area of the beehive (good for clearing out a small bandit camp)
-If you manage to get close enough without disturbing/destoying it, you can put the Beehive in a secured bag you can then do things like release them into a room to clear it out. (this is Bruce Lee inspired... but he used a snake)
-A Beehive has the ingredients "honey" and "beeswax", which can be used with alchemy
Bees:
-They do damage over time.
-They can't go in water
-certain destruction spells or torches destroy the bees easily
-You might find non-hostile Bees on flowers in the wilderness, or just flying around (with purpose)
-They don't attack you if you don't disturb them
-The damage done by the bees would diminish over time, even if you stand still (as they die from stinging you)
I do realize this might be harder to implement than it's worth, but such a small addition would be GREAT for my stealth character. I don't have the slightest clue about how long they would need to implement beehives, but I agree that if it takes too long (for even a more basic bee system), this would all be superfluous.
I should point out that there were bees in Bioshock, and if it worked somewhat like those i would be satisfied http://www.youtube.com/watch?v=lDx95dXF0es
I got this idea partially from Metal Gear Solid 3 too http://www.youtube.com/watch?v=Fn7q_Psx_Kc <--this video doesn't show him actually shoot it down, but you can tell Snake wants to. I just couldn't find a good video showing it in action. When it happens in game, It happens like how you would imagine, and it makes nearby NPCs run away (and considering it was last-gen it seemed pretty damn realistic. It wouldn't even need to be much better for Skyrim).
