I am thinking Redguard or Imperial DragonKnight?

I realize Orc is good option too, but really...who wants to be an Orc

It's really down to what racial traits you want, I personally rolled on Orc this beta due to the fact I like all of the health regeneration perks that come with the race, along with increased heavy armor experience boost. Redguards have traits related to stamina recovery, so yeah, what would you rather have? Another important desicion is picking a character you like the look of as you will be looking at it allot, so that's Orc out of the picture. As for Imperials, I'm not sure, have their racial traits been revealed for TESO yet?

I have a thing for sorcerers because they can deck themselves in so much armor + have tons of AOE.

Imperial have all tank traits look on esohead

Imperials do have tank passives, but when you learn all those passives you will have overloaded stats, heck even if you dont learn them you can have the health and health regen overloaded by using enchants and the heavy armour passives. So racials really dont make a large difference.

I'm not sure if it's a hands down win. I mean, it's so easy to overcharge on every class.
