There is a series of Blender2Oblivion sessions at http://www.tesalliance.org/ in the Modeling forum. The emphasis is on creating content for Oblivion with Blender. Basic UV mapping is covered in Session 1 with more in Session 2. You can study them on your own as tutorials or join the next class (starting in about two weeks).

Unfortunately, UV mapping is a little too complex to explain in a post here. You will need to study a tutorial to understand it. You can study the one I linked before or one of several others you can find by searching the net. You need to know that the method of UV mapping in Blender was changed (for the better) starting with version 2.45. So, if you are using the latest stable version (2.49b), make sure that the tutorial is written for version 2.45 or later.
