Similar to chitin.

Bone is smashed up into powder, mixed with an exotic mixture of reagents, pressed into a mold, and allowed to harden. (http://www.imperial-library.info/mwbooks/bone.shtml)

Actually Dunmeri Bonemold is made with chitin and creature shells. I'm not fully sure if it is ground into a powder first or just shaped layers with resin as an adhesive, though.

Trollbone however, was actual bone (well, not in an exoskeletal sense).

Chitin and Bonemold are NOT the same thing.

Chitin is made of insect caripace. Bonemold is made of shaped, or magically grown bone.

What eats what? and What is this made of? maybe the two most unanswered types of questions in Morrowind. Like are all the Redoran buildings really shells, or just imitations of the original Skar-style designed to resist ash storms? What the heck to Guar subsist on in the ashlands?

Bonemold
Also known as 'Great House' armor in Morrowind, bonemold is a medium weight armor affordable only by Dunmer nobles. Each piece is assembled from many pieces of softened shell, molded into shape, then bonded and reinforced with resin glues.

The Bone books are wrong, since they're foremost a tall tale.

... or just imitations of the original Skar-style designed to resist ash storms?

Yes.

http://www.imperial-library.info/mwbooks/great_houses.shtml are designed in the Dunmer village style, built of local materials, with organic curves and undecorated exteriors inspired by the landscape and by the shells of giant native insects.

What the heck to Guar subsist on in the ashlands?

Um. Er. Scrib.
