I have a question and I'm wondering if I have to do enchanting and smithing to be able to enjoy the higher levels. It seems like everyone is doing it and I dont want to be having a hard time later in the game because of not doing it, i'd rather just smith it to legendary and call it a day and maybe put some enchantments on it or something but not some god like stuff just normal but since i'm not doing all those special boosting things am I going to end up having a hard time later on in the game like not being able to kill certain npc's or will smithing to legendary and adding a enchantment be fine for all the levels? Or am I screwed if I dont start boosting the weapon/armor stats?

You definitely don't need any crafting skills at all to remain capable in combat throughout the entire game. Just pick your perks appropriately, and you'll be fine.
