Just wanted to ask, because I usually feel weird taking the armour off of a boss so I can shove it in a chest somewhere, simply because it's unique.

The vanquished know no shame. They can lay naked in a pool of blood for all I care. Their [censored] is rightfully mine now.
The dead don't need [censored] and I want this pretty armor. It's mineeeeeeeeeeee

depends on the situation...
for example, if the boss of said fight was my ally at one point, and helped me in a major way previously in the game somewhere, then I would not feel right, actually i may leave an item of my own with them to "honor" my lost friend/ally that i was forced to kill
if hes someone who was against me from the start, sure why not, their body will eventually decay away anyway...
although, this is a Moot Point, as everyone knows "Steevie Wonder Doesn't eat Pepperoni"
I almost always take unique armor/equipment. It's more of a collector thing though, if I'm roleplaying, I'd leave it up to what I feel my character would do.
It'd take 5-6 screenshots to list all the stuff I've looted off bosses in Skyrim that I have stored in a chest..
I've always taken their stuff after defeating them simply because it's a bit of a habit, but I also look at their equipment as being trophies (especially when the boss has already given me a hard time) and proof that I was able to pull through. What I end up taking depends on what they had been wearing, such as unique items or items with their names on them.. but I wouldn't take a generic item unless it's more powerful than what I currently have.
In Skyrim, I'll ALWAYS take their armour/weapons. Sometimes, though, I don't like the idea of some NPC's being stripped of all honour. For example, I respect Ulfric but I cannot stand for his Civil War. If the war was waged after the crisis with the Aldmeri Dominion, then fine. But all he's doing now is throwing Tamriel further into chaos.
But seeing as Skyrim is the glitchiest game out there , I'll take his sixy and cool armour and put it on a mannequin. Then, I take it off, put it back on his body, come back and voila! His armour's still on the mannequin, ready to be duplicated again and again!
If there is only one of something, I have to have it.
