Bretons

What are Breton's real life equivalent? I think the British, just by the way they look and act.

Their culture is based off of the Anglo and French cultures as it is present in their names, behavior, and dialogue. The French and English also both believed (some still do) that their "race" is the most intelligent on the planet. (Bretons start off with increased intelligence and magery.) I would go in further, but I am quite tired and in need of a nap.

However, you're not too far off - two of those eight races became the modern Bretons, who, other than language, culture, ethnicity, food, appearance, and political allegiance, are French.

It's the Bretons that the Bretons are based on, quite obviously. Bethesda just assumed that they didn't have their own names, as they were in France, and anyone in France is French, right? Well, at least they used the culture. The clans, society, kingdoms, and even the geography of High Rock is similar to that of Brittany.

I mentioned in another thread that I don't think any race on Nirn have a definitive real world equivalent. Each Nirn race has cultural facets from many real world cultures. So the Bretons could be Post Norman Britain. There you have an intermingling of Anglo Saxon and Norman cultures. I'd imagine a celtic like fringe would be part of TES High Rock as well.

That's essentially it. I expect that's what some people mean when they say Britain (that it isn't just England). But the Bretons are nothing like the Celts in the British Isles, they're definitely Breton in their society, culture, history, and traditions, so that anolysis doesn't quite work. It seems like it could be used as a basic introduction, though, which is really what the OP was asking for ;)
