I just recently installed the mod that brings the other mods "Uvirith's Legacy" and "Building up Uvirith's Grave" into one. However, I was wondering if I need to have all 3 of the mods installed? Or do I just need BUUL and UL installed?

BUUG is a full Tel Uvirith mod, it alter the interiors cells of Tel Uvirith and add a city in Uvirith's Grave.Uvirith's Legacy alter only the interiors cells of Tel Uvirith and add several topics to other Telvanni characters while BUUL alter only Uvirith's Grave (BUUL had been made for compability between BUUG and other mod altering only the interiors of Tel Uvi.

So either you want a all in one mod for your tower and you play with Building up Uvirith's Grave alone, or you want a bigger stronghold with lot of space and a small town around you take UL for your tower and Building up Uvirith's Legacy for your city.

BUUG construct faster, expand your tower more quickly and add more building to your city ( Theman manor and a fews others building aren't buildable in BUUL). Or you want a bigger and more detailed tower, far more quests but slower in progression, then take UL for the tower and BUUL for the city ( If you choose UL+BUUL take also LGNPC Tel Uvirith comptability patch it restore a good chunck of the parts removed from BUUG).
