Okay, apparently I can't edit AI packs at all. I can't even click on them in either an actor's AI Packs tab or in the Packages list, as the GECK simply crashes.
I've tried setting the GECK to XP SP2 and SP3 compatibility mode, I've turned off Aero while the GECK is active.
Is the GECK just simply screwy with Windows 7 x64 or something, or is there a fix?
I have Windows 7 64-bit and all is well in the land of modding. It must be something computer related, or perhaps a bad install? Did you just install the geck, or was it something that abrubtly started happening?

I noticed recently when I was making an overhaul to a quest script that made a bunch of package conditions invalid, that the Geck would throw a errors when listing them in the package list window. Maybe you have a corrupt package with a 'worse' problem? Have you tried creating a fresh, blank esp to see if the problem persists?
I have heard of this problem. If there was a solution it was something funky. You should do some good searches of this board on AI Packages or Crash to see if you can find anything.
Its not like when the GECK is open and you are looking at the list of packages and it blows up (I get that too, with certain mods that have package edits/additions) - - some people seriously cannot open an AI package in any form without a crash, even out of an NPC instead of the index.
