So I enchanted a dagger so that if I kill someone with it, it absorbs their souls into a soul gem. I have 7 greater soul gems and tons of other regular soul gems. Everytime I kill someone it says "No soul gem large enough". Can somebody please tell me why it's saying this?

You said "someone". If you're trying to soul trap NPC, you need black soul gem or The Black Star.
