Your easiest option is to use Boot Camp to create a Windows partition on your Mac, install Morrowind to it and boot into it whenever you want to play. This would require you to purchase Boot Camp plus a licensed copy of Windows.
You could also install an emulator such as Wine, if you have an Intel-based Mac. This may require some tinkering with configuration settings to get everything working properly, though. It will also impose a performance hit, but if your Mac is fairly new this may not be a deal breaker with a game as old as Morrowind.
Most notebooks do not have a 3D gaming card in them, so that would have to be researched if your rig can even play a demanding 3D game.

The first version of the Macbook (early/mid 2006) has a Intel GMA 950 integrated chipset, which should run Morrowind fine (in Windows).
Bootcamp (version 4) can be used to partition the hard drive for Windows 7 32-bit, Windows Vista 32-bit, or Windows XP 32-bit.

The problem is going to be that you most likely only have 512MB of System memory, so Windows 7/Vista will not run well on that amount of RAM. Finding a Windows XP license is going to be a problem. Also finding additional memory for Macbook may prove difficult.
