Ash Zombies are the one's with holes in their faces. I'd say Ash Slaves and Zombies are disfigured in rituals, but I don't know if there's a concrete reason.

IIRC, one of the first steps in becoming an Ash servant for the Sixth House was to loose your eyes. (this was reflected in a few mods)
It makes sense, since they are literally a low ranking slave.

And I think all slaves of the Sixth House were Dunmer, so basically the Ash Slaves are non-Outlanders ("pure" Dunmer) that have been deformed by Dagoth Ur.
