When I use healing hands on her, she resists. I haven't tried necromantic healing and such yet, but i've read on message/forum boards that those cure undead spells don't actually work on vampires.

So...

Can she just not be healed during combat aside from her drain life spell?

Those spells work on her, just not you. Normal healing spells still work on you.
