I do not grab items I do not feel will sell well. I also do not grab everything in sight, I grab items I wish for my house and stuff to sell and make a few trips back and forth.

You can increase stamina to increase your carry weight limit.

Also the standing stone, The Steed Stone grants you 100 extra pounds.

10 days but it does not work like Oblivions 3 days away as far as I know, probably around 10 days fixed + away for some time.

I know the barrel in front of Alvors house respawn.
Some containers in the house might be safe as they have specific items you are allowed to take.

Named dragons like the first you kill in the main quest is verified safe.

are you sure about that last one
the first dragon I killed isn't there anymore
