Are you in building mode at a settlement? That's the only way you can scrap a couch.
All kinds of clothing and such you can scrap for cloth.

Most of my cloth comes from scrapped Long Johns, Gunner Fatigues, and (oddly enough) cigarette packs / cartons.
Pre-war money and the Boston Bugle newspaper are also great sources for cloth!
Sounds like you are in game mode not workshop mode? In workshop mode you would get a scrap option, "take" would be game mode on items that can be taken.
Don't use pre-war money! That stuff has an amazing selling price (especially per unit weight, if it even HAS weight)... I actually have to remember to dump my Pre-War Money into another container when building so I don't accidentally scrap it to make a bedsheet or something.
FWIW, there is a mod that re-flags some valuable things as MISC instead of junk. Pre-War Money is one of those, but it also flags a LOT of other stuff as non-junk. Usually unique items like the pristine pre-war versions of things like globes, that you may find. I think it's possible that the Giddyup Buttercup may be on the list (in whole or in parts or both)... but considering how many Buttercup pieces you can find in some places, I'd just as soon that remain junk-able.
I know, pre-war money was always my standard currency in New Vegas, but I do make a lot of caps and I pick up so much ammo that I don't use, I really don't need Pre-war money to barter with.
I usually provide my settlers with gunner fatigues, since it's one of the select few clothing items preventing them from going starkers if they wear armor. Also they only provide one unit.
You find cloth everywhere. In duct tapes and several other junk items. The lady at the basemant at Diamon City sells shipments. They're dead cheap. So you can always stock up.
