Tip: When RPGs started, combat was realistic.
But very soon, people started to think they dont want to reroll new characters all the time, and hitpoints where invented.
maybe that's because "realistic combat" was implemented in an unrealistic way. The first rpg's weren't exactly the best simulations for "realistic combat." A computer game isn't going to make combat realistic, so the best it can do is portray this kind of combat in the most accurate way. Maybe for the first games that meant one hit kills, but nowadays computers might be able to create a new "game" in which people actually need to use various skills in order to attack enemies in the first place.
Hit points could be realistic for heavily armored warriors (the armor would significantly reduce damage), but for lightly armored warriors it might be better to have a system of automated or activated dodges combined with pre-programmed parries, counterattacks and activated "special attacks."
