Coming back to Skyrim (legendary questions)

Hi all, I need help with the legendary edition of Skyrim. I have played vanilla way back and have forgortten some of the advanced mechanics of the game. I'm trying to make my character as OP as possible in a legit manner to deal with enemies on legendary difficulty.

- is it possible to get fur armor to 567 AR without resorting to restoloop? If so, how should I go about doing it in lieu of using up one precious enchantment slot for damage resist cap? I'm supposed to fill up my appareal slots with fortify 1h or 2h (to get as high damage as possible) and elemental resist enchantments right? I should mention that I'll be using Shrouded Gloves to stack backstab damage.

- are the best weapons still dual-wield backstab daggers in this DLC packed version?

- is destruction viable in the legendary edition? I understand there are some poisons that will make destruction damage stack, but with monsters taking 25% of what's shown as weapon damage, is destruction of any use at higher levels?

My aim is to try to get an optimized character and create a save file before doing any of the quests: MQ, guild or otherwise. On this note, is there any fast way to level up alchemy/enchanting the moment I step out of Riverwood at level 1? All the tutorial vids showing level 1~100 in < 2 minutes are with level 50s or higher characters.

If you are playing on the xbox, then Skyrim is still the same. If you are playing on the pc, then use this mod for leveling up your character. http://www.nexusmods.com/skyrim/mods/14152/?
