As of right now, Morrowind has two complete and extensive crafting mods: Complete Morrowind and Morrowind Crafting. Both are excellent additions to the game world and provide a lot in the way of activities to add life to the game. I'm curious as to whether Oblivion has any such mod available for it, or at least WIP?

There?s Crafty bits, which is pretty extensive I have understood, and also MMM has a module which allows you to craft arrows and armor from bones, leather, flint etc.

I just loaded Millstone Farm (COBL) last night. There is so much freaking crafting to do I won't even get to play my game. Download it - you'll be impressed.
