On the belt buckle of bonelords you can read the daedric signs for UOS (Yoodt Oht Seht). Is their some (known) lore meaning to this or is this a simple developer signature like the wormgod pipes?

Yes, this was done. Basically this are abbreviations for the different schools of magic.

In clockwise order the letters on the seal mean:

MIS (=Mysticism, Yakem is replaced with Iya as usally)
ILL (=Illusion)
CNO (=Conjuration)
ALT (=Alteration)
DES (=Destruction)

Why Restoration is absent though it resembles one of the main fields of study (namly in Anvil) is unkown.
