Just started playing again and dl a few mods. Installed Darn UI and the text gets cut off on the opening page and in game. Ive followed the installation and replaced the fonts in all 3 ini files.

I dont know what else to do, any advice?

it's because steam overwrites the .ini changes needed for the fonts. If you use that vanilla launcher this will happen every time. I use NMM and, launch the game via the NVSE launcher which will skip the vanilla laucher and prevent steam from overwriting you .ini changes.
