I recently started playing Skyrim and have absoultely fallen in love with the game. I recently acquired both Dawnbreaker and The Black Star. My understanding was that Dawnbreaker had some kind of ability similar to soul trap, however, I've killed many bandits and creatures and The Black Star remains empty. Am I doing something wrong? I apologize in advance for my ignorance and hope some of my fellow Elder Scrolls enthusiasts could lend me a hand. This whole enchanting business seems to have a steep learning curve and I'm trying my best to learn. Thanks in advance.

Dawnbreaker is the antithesis to a Black-Star's intentions.

Simple answer: No. The Dawnbreaker has nothing to do with capturing souls.

Sorry but Dawnbreaker does no such thing.

Dawnbreaker has no soul trap enchantment. Just fire and a chance to make surrounding undead flee when you kill one of them.

No you're fine. Dawnbreaker just doesn't have a Soul Trap enchant

It just turns undead when it destroys them, which occurs on a percentage of hits. You need a soul trap enchantment. This is kind of a spoiler but there is a good one at Ironbind Burrow, which has Fiery Soul Trap which does 10 pts fire and soul trap in one enchantment, which can be broken down then added to a weapon of your choice.

No Dawnbreaker doesn't have any kind of soul traps it makes undead catch on fire or explode.
