I think this could add an interesting aspect of the game that would be similar to a mystical version of mafia. You could assume the role of a crime lord, OR you could just be a petty theif that works for one - doing assorted crimes to get paid.

I'd also be interested in seeing some throwing knives, wood working, the ability to invest gold into potentially profitable business opportunities, carriages, hair growth over time, real blood that is spilled when you strike or stab someone, realistic fighting (if you stab someone in the heart they actually die and same goes for shooting someone in the throat with an arrow), Countless unique artifacts that can be collected, broad selection of houses that vary in all sizes and price ranges, tame-able creatures (your own dog, similar to pets in WoW), extremely upgraded hand to hand combat experience, the ability to make a bomb of some sort through alchemy, tattoos
Cooking! fishing! smithing! mining! - like every skill from runescape besides the stupid ones

the resources of the world should be given the option to serve as pieces for a greater creation. Similar to the workbench of fallout
I'm ridiculously curious about the vampires of Skyrim. I was very intrigued by the idea of being a powerful vampire in Oblivion and I can't wait to see what the new vampire concepts consist of
