Actually, Bethesda might have made a very good decision.
11-11-11 is very well an iconic date. A date such as that will not be seen again for a long time, and is very memorable, for rarity and relevance. Triple eleven. Sticks in the mind. I'm always forgetting CoD's release date.
A good way to recieve attention is to go head-to-head with the heavyweights. When reviews start coming up and assuming they'll all be reviewed with positive reception, everyone will see Skyrim has a rating just as good -if not better than- the other two heavyweights, Battlefield and CoD. If Elder Scrolls manages to recieve the Game of The Year Award despite CoD and Battlefield, then they'll have aquired a large amount of acclaim, making them a sought out title to buy.
Thankfully, The Elder Scrolls is an entirely different genre of game as well as era. Thus, it's not directly competing. TES is offering must more than CoD.
I think a lot of people will end up buying both.
The holiday season will also see sales of the game go up.
