I'm assuming the OP is classifying the notion of having a stockpile of iron ingots + leather strips to make iron daggers, and getting smithing to 100 = exploit.
Hopefully, he put perks into smithing. Otherwise, whoops.

Oh, and he's levelled up because of this, and the gameworld has responded accrodingly. Makes sense.. Hmmmm... LOLOLOLOL!
Some of it. It won't let me upgrade my weapons to superior or legendary even though i have the necessary items. I'm about to go snag some new dragon armor (I got rid of it before) and try to learn some enchantments for it
You might want to try and find an item that gives +smithing to improve the quality further on the gear.
Spoiler
Try going to Markarth and doing the Forsworn Conspiracy quest. Its localized inside town so enemies shouldn't be too terrible. One of the rewards for that is a ring with +smithing I think
Congratulations. You just powerlevelled yourself into a fine BLACKSMITH. Sure, you don't know how to fight effectively.... most blacksmiths don't. Not seeing the issue. Next time, try not creating a blacksmith.... try making a warrior that does blacksmithing on the side.
I wouldnt say I have no combat skills. I'm 60 two handed and 50 archery. It's just that I quickly went up 6 levels now everyone has good [censored]
Having cool armor is all well n good, but you also need decent attacking skills. As a general rule for my character (I play 2 handed warrior), I never level smithing higher than my primary attack skill (2 handed) as to not level up too quickly and gimp myself like it appears you have done. This is important for me as I play on Expert.
If by the Smithing Glitch you mean that you powerleveled it, well then you have found the games way of balancing this. And using you powerful armor and weapons wouldn't hurt either.
Wait a second.. Why on earth would you go the light-armor route? You end up at Dragon gear at the end regardless.. And Daedric (beast heavy armor and weapons in game) is on the heavy armor side.. I'm sorry but your logic escapes me.
