Diffiulty - And How to Improve It

TES games have always allowed you to become a jack of all trades character if one wanted. A self supporting Mage, Tank and DPS machine all in one. True difficulty will come down to the individual player and the restrictions they place on said character. Personally I like to make challenges within by not rolling an all you can be toon while others love that playstyle ala Pull with Fireballs to soften the enemy up, When the Enemy gets close you tank him in Heavy armor and proceed to finish him off with a 2 hand weapon.../yawn

This.

Not allowing yourself some parts will make the game very challenigng and fun at the same time.

For Skyrim, honestly, there is just ONE skill and another in conjunction you need to stay clear of.

Stay awy from Enchanting unless you are a mage. All other classes should never, ever, touch this skill unless they want to break game balance.
Smithing: Dont push smithing and get high asap. Smithing in itself is not too overpowered I think, but together with alchemy and enchants its very strong.

if you want to do smithing. Go for it, but do NOT, ever, do it together with enchants for stronger smiths.
Staying at around 60-70 smithing is a heallthy skill amount and not overpowered.
Going for heavy, legendary dragon bone armor at lvl 20 and complaining that enemies cant hurt you, is YOUR fault. The game allows you to do it, but its up to you to do it or now.

There should never ever be more enemies involved in encounters since some are scripted for conversations etc. They cant do this.
The way its now is good, but they should instead up the armor and health of enemies but keep damage if you want to go above Master.

Im at lvl 35 without enchanting or alchemy, I do have a little in smithing to make more damage on my bow, but I ONLY use pickup and quest gear.

Im playing mainly on Expert but am very often forced to go down to Adept due to difficulty.
I gained many levels from having 100 in pickpocket and having 50 in one handed and shield when I actually just use my bow.
I want one hand and shield incase I need to use it, which happens at times. But I had to pay quite some levels for something I seldom use.
As such, I only have 65 archery at lvl 35, which is a low main weapon skill.
And since I mainly use steel arrows, but I do have a Glass bow I smithed up a little. Still, Im having a very hard time, and I love it. Cause I choose to have it.
