First of all, Bethesda, Great job on skyrim!
I'm really enjoying it!
But the reason for this post is a slight problem I have.
Whenever I put on mages robes/archmages robes,... everything with an included headwear,
the headwear doesn't show. So when I wear the blue mages robes, I only have the robes, and nothing on my head.
Is this a setting? if so, great idea, but how do I change it back to displaying/wearing it?
If not, how do I resolve this bug?

Robes are like armor, they only occupy the chest and legs by design. They aren't meant to take up the head slot as well.

But whenever you see an npc wearing robes, they wear the hood aswell, like for example the Whiterun court mage.
I remember playing 2 days ago, and whenever I wore the robes, I would have a hood on aswell.
But when playing today, I noticed when unequiping it and putting the robes on again, I no longer have the hood on.

I have noticed a bug, on PC but also extends to PS3 (not sure about xBox)

When you put on the Arch Mage Robes and also equip the Mordekai face piece (head) when you look in 3rd person your tunr into the headless horseman from sleepy hollow.
The hood is up but there is nothing below it, just an empty space no head, you can also lookin inside the archmage robes and see that there is no body either...

Not a bug at all, it depends on the robe.

The archmage and greybeard robes have the hood on, pretty much anything else doesn't.

And someone mentioned the archmages robes, well when I equip them, I get this:

That isn't even the same robe by a long shot.

I didn't have black robes at that other save.
But look again, I have posted an image of the archmage robes

Probably unrelated but the foresworn armor bugged on me today, suddenly both the outer part of the gloves and boots disappeared, I was able to get them back by equipping something else and then equip them, however they changed again a fem minutes later.
Look pretty stupid as it hide the hands and feet and only show the inner part of gloves and shoes.

Tried unequiping, saving it, restarting game, equiping it again, still have this bug...
Even started new save, is affected aswell.
But when reloading one of my first saves (got the game on release) I don't have this bug.
I know this is merely a cosmetic issue, but my character is RPG'ing as a vampire necromancer and I really liked the hoods...

Oh... You're a vampire.

That's the problem, I read about that somwhere a while ago.

Ok, done some experimenting...
It seems that since yesterday (looked at my saves), my archmages robes are bugged.
When equiping them on every save before them, they display correctly
But every save after that is not displaying it correctly on ALL robes, even robes like 'hooded black mages robe'
Even when starting a new game (so it has nothing to do with vampirism)

How can I resolve this?

There are hooded robes built in to the game. There are also just hoods for headwear and just robes for Chest/legs. I dont know if the hooded robes actually work as a hood too. I can check when i get home from classes. MOst of the NPC mages are wearing a hood and a robe sooo yeah.....
