Horse armour would be excessively useless. To me, anyway. Really don't see any reason to include that :P

Personally, I would welcome:

1: the addition of new land to explore (bits of the surrounding regions, or perhaps Solstheim?)
2: More factions to join and follow questlines for (Silver hand etc.)
3: Expanding upon the magic system (spellcrafting, more kinds of spells)

1) Let me create a fortress from the ground up through quests/purchases. Let me choose what type of castle to build (make a choice rather than having a set of 5 things to buy). Decorating a house is so LAAAAME compared to this. Why was this ever taken out in Oblivion?

I'll second that, and add that they should create more depth within the characters. I know, I know, waa waa not a dating sim whatever. It's still a really big draw to a lot of other games (BioWare titles come to mind) and just good fun to learn about the friends your character has made as opposed to the flat and lifeless experience Bethesda threw in. It really feels like it was more of an afterthought. DLC with some in-depth NPCs where you actually have to spend time helping them in their lives\on their quests before they look your way would be nice.

I'm expecting the size, scope, and style of the DLCs to be very similar to FO3's, so we'll probably see these DLCs:
1) A large dungeon, such as Fang Lair
2) A small new worldspace with highly intermixed hostile and friendly areas and a choice of two factions to support, such as Dragonstar or Orsinium
3) A far reaching epic quest mostly employing new dungeons in the existing Skyrim province
4) A free-roaming adventure in a new worldspace about 1/3 the size of Skyrim per side (ie, 1/9 area), such as the mainland west of Vvardenfell
5) An adventure in a small but extremely bizarre and exotic locale, such as a daedric realm

I personally would like a DLC regarding becoming a monk/hand-to-hand fighter. This would include hand-to-hand as a skill and possibly others, as well as perks for the skills. The fact that Bethesda just decided to completely throw out hand-to-hand combat (besides the occasional brawl) makes me sad.

Top 3 for me

3) More/more interesting and useful spells. Especially in destruction. I really only resort to spamming firebolt/fireball which gets tedious.
2) Some Epic plotlines. I felt that the Dark Brotherhood questline was awesome, but the other guild/MQ lines were kinda straightforward. Would like to see a DLC with a large overarching quest line.

My top thing. Forget the [censored] money milking DLC's and actually make a decent expansion with content worth at least 3 to 5 DLC's

Some sort of simcastle/town would be pretty cool given the rich environment you have to work with. 1 per character, of course, but you would be able to start a small village just about anywhere and watch it grow or fail depending on your stewardship and location selection. An entire separate level scheme with management skills, combined with fighting off invasions of this sort or other.

That would be something fun for a max level character and in line with their status.

1. Revamp of the Vampires in game and for them to add vampire covens and factions that have large questlines.

2. Total economy mod that would allow the player to open up a shop, where npc's would randomly come in and buy items. Also allow the player to hire npc's to gather ingredients for him or deliver finished product to a market place. i.e. Kind of like playing guild 2 but in skyrim. Also I would like to see the cities much more populated than they are.

3. I personally would like to see Morrowind ported over to the new engine.

1. A beefed-up marriage system. ie: a little more depth to marriage once you're married, and hopefully a little more "romance" or dialogue, maybe questiness, leading up to it. (At least for some of the options, if not all). Being able to marry certain key people have have it affect the game in some way, for instance, would be awesome.
2. More marriage options. Have all the race/gender combinations represented at least, and preferably a few "types" in each race. Sooo tired of almost all the husbands being big beefy and/or facial-haired types.
3. I really like the fortress/maybe small village idea. Let it take some questing or something at least slightly difficult to get, but once you have it, you can send the various possible followers there (once you get them/hire them/whatever) so that you can just switch them in and out there. Let us put the various crafting stations there. And if you're married, your spouse's store could get more intricate and beefier. And yeah, let us have options of how to decorate, rather than just a few upgrades that we either have to buy or not. Maybe it could even have a stable so we could buy multiple horses, and switch out between them.
4. The ability to craft your own custom spells again would be nice. :P

Edit: oh yes, and how could I forget?

5. Add at least one more ring slot for Ysmir's sake!

We saw Sovngarde. Maybe Hircine's realm! Since the companions questline was heavily influenced by warriors and afterlives in Sovngarde and Hircine's realm, I think we can do something.

What about the people who don't want to be a werewolf, but want to hunt werewolves? Freedom is in that option.

From what I heard, in the Companion's quest you cannot turn down being a werewolf. Which makes me fear it and makes me avoid the companions quest all together. A Silver Hand DLC questline would be the way around it. I'd be joining a Fighter's Guild, just not one that forces me to be a werewolf.

Being a werewolf has 1 bad thing, no XP bonus from sleeping. That's it. :/

I might possibly commit murder for a Morrowind with updated graphics and an updated engine. :) (And maybe add in a few things like some of the new crafting, and marriage, just please don't "redo" and simplify anything...)
