Does hunting critters improve Archery Skill?

Archery level increases with each arrow that hits a living creature, so yes.

I reached lvl 30 by hunting, then I took an arrow in the knee.

Yes.

All skills improve through use.

As long as you hit your skill improves.

Only living creatures though. You can't level up shooting trees.

I made an "evil" character and I earned a ton of experience by simply shooting guards in the knee.
