I don't recall seeing the player's body in first person at any point in the trailer. While the sequence of running through the forest did look more realistic than running usually has been in past games, I think that's just an effect added to sprint, and I still didn't see any part of the other other than the hands. In short, while I haven't given up hope on seeing the character's body in first person yet, this trailer doesn't confirm we will.
As far as the dragon fight being scripted, I don't doubt that the fight itself was scripted, as it seemed to flow just too perfectly to be entirely dynamic, but it's still in-game footage, and we could even potentially see things like that in scripted events in the game, and I see no reason to assume that just because it's scripted means that the sprinting won't reflect what we'll see in the actual game. It's still in-game footage, just scripted, just like how what characters do in Oblivion when control is taken from you are scripted, though of course, this is a lot fancier than such scripted events, because having a person walk up to another, hit him with a sword once, and cause him to drop dead wouldn't look very impressive for the trailer.
