It's great that you don't feel you need any of the new things that the SE will bring. Another testament to how great of a game it is.
The thing is, the game's remained popular and relevant well past the hardware class it was made for, and a great number of PC gamers with new systems essentially have to play the original game in handicap mode. They've already purchased the gear to run it at modern standards, and for Bethesda to release this to take advantage of new advances in computing hardware is nothing short of awesome. They didn't have to do that.
That said, I don't personally have much use for this SE version.. not right now anyway. Skyrim runs shockingly well on my ancient WinXP PC, even in ultra at 1080p as long as I turn off sky reflections. And by 'ancient' I mean this is the same dual core PC I built and put XP pro on in 2005... 11 years ago. It was already old when Skyrim was released. I keep an appreciative perspective about the SE version even though it doesn't apply to me, because underneath all the glitz and pvssyr about it, it really only means that the game we all love will live on for that much longer.. and that's not a bad thing.
