The problem with dual wield pistols is in the reloading.
Dual-wielding is maybe cool and works in games, but personally I don′t like it since virtually no one can accurately shoot with two guns at the same time and thus immersion breaks for me. I′m fine with Experimental MIRVs and talking muties, though...
What I would like to see however is being able to hit with the stock; butt-kick or whatever it′s called. That is a much more useful thing for me.

For melee it would be great, but not for guns. Aiming would have to be seriously degraded while using both guns. Now, if they still used the dice-roll, chance to hit/miss, from F3 it would work better with guns but, with player skill as the bottleneck and not character skill, it would just be OP.
Probably not or they would have showed it at all the E3 videos.
And if they do it, please don't let it be as terribly clunky as the Skyrim version.

Why is it ok for melee? Melee suffers from all of the same issues that guns do.
Not necessarily, there are/were many real world techniques based around companion weapon melee combat. Dual wielding guns on the other hand were largely popularized by television/video games and gun enthusiasts. Big difference between the two of them but neither are common because they don't offer much advantage while having drawbacks.
The vast, vast majority of 'dual wield' melee forms has the off hand being used defensively or as a back up. Just like where the roots of dual wield pistols is.
I'm not against duel-wielding small things like pistols, but it should come at a great cost to accuracy. You can expect to hit a lot, duel-wielding, but what you're hitting is pretty much everything else around your target, with maybe just a small number actually hitting. And you have the problem of needing to reload with two pistols in hand.
Why do people always act like an optional thing in the game should not be included just because they don't like it? Is it realistic? No. Does it have drawbacks? Yes. Does it look cool and would I want my PC to be able to dual wield some pistols in my single player game that affects exactly n other person's game or game style? Heck YEAH!
Having it as an optional perk on a perk tree or list of perks only effects those that take the perk, and keeps said people from acquiring some other perk that CAN be taken by those of you that think such a thing is silly.
I'd love to be able to carry a flashlight and a gun at the same time. Or a gun and a knife in case I get jumped.
I have no issue with this type of dual wielding, although a flashlight attachment should be a mod in the game considering the number they advertised.
As for dual wielding guns? Hell no. It's absolutely ridiculous and looks stupid (including in movies). Once I saw dual wielding in Resident Evil I was done. The only times I have accepted dual wielding is with blades (as it makes sense) and in Halo.
Why can Halo pull it off and not Fallout? John-117 was not only trained since the age of five and physically augmented to become a super soldier whilst undergoing stringent schooling, but also dons advanced armor that compensates for dual wielding by enhancing all of the users senses, increasing strength, displaying a reticule and ammo count.
TLDR; I think dual wielding is moronic outside of blades and Spartan super soldiers. It's so stupid in fact that is has ruined games and movies for me.
I've got no problem dual wielding say a pistol and a wrench...but double pistols ought to give a aim penalty and means you can't reload until you drop one gun.
I guess I'm ok with having the ability to duel wield melee weapons and pistols in Fallout 4.
You're correct about companion melee weapons being mainly used as a defensive measure but, dual wielding pistols doesn't provide any kind of defensive use in the real world, it's just flair, style, etc., there's no practicality in it's use, defensively.
