I would like if one needs to eat, drink and sleep in order to function properly.
Also, yes, animations for that stuff would be cool.
Same for potion consuming and alchemy potion making.
Alchemy is one of my favorite skills in TES, but that rapid potion making and potion consuming made it simply too good.

inb4poopinganimationplz.

Personally, I wouldn't mind, but I can always assume the hero character simply assimilates with his/her food/drink rather than actually eating it, digestion is so inefficient.

The trouble with Oblivion was some npcs had a 'ponder object' in their inventories, part of the way the game handled such actions, which they looked at when the AI told them to eat or read, and you wouldn't want one in your inventory. You would see this if you killed some members of the Mage's Guild, a weird green square in their inventories.

I would like an eating and drinking animation, it would make the experience more realistic.

This is a good idea if it takes a few seconds, and makes you completely vulnerable while doing so. It would solve two problems: 1) ingesting tons of potions within a split second (bad for immersion, amirite?), and 2) combat as a measure of how many potions you have.

Now, if you have some kind of limit on the amount of stuff you can ingest, that would be nice, too. No more drinking half your bodyweight in potions within a few minutes. Maybe a max limit on total weight of stuff you can ingest per day or per hour. This would fix gameplay, and add immersion. What's not to like?

Then the only thing that needs to be fixed is healing magic, but suitably long animations work well for that.

3rd person would be easy and its absence in Oblivion was pretty stupid.
A first person one would be EPIC, if they pull it off
