There some magical place to find ebony ore or daed hearts? Haven't been able to find any in the shops and only found 1 spot so far that I could've mined the ore. Up to 90 smithing and not much luck

there are 2 Ebony Ore deposits on top of the Throat of the World. The very top

go southeast of windhelm into the mountains and you'll find an orc camp with a mine in it that you can get like 50 ebony ore from..called gloombound mine in narzulbur (orc camp)

try redbelly mine and gloombound mine and for daed hearts try the college of winterhold and the little vampire girl might seel some but i dunno

check the Gloombound Mine (it's near Windhelm) for ebony ore. No idea where to find daedra hearts though, i have a few but dont remember where i got them

If your main concern is to level smithing then iron daggers and leather bracers are the best way to grind, you get so much of those materials and you'll hit 100 in no time.

I got a couple Daedra Hearts from Mehrunes shrine, and I believe they respawn.

Edit: Also, don't quote me on this, but I think the general store in whiterun sells them randomly from time to time

Its to actually make the stuff not grind =p

Haven't even had the chance to get there, blood dragon on the way and some herd of mammoths tried to KS him, had to chop chop the lot of them with the big axe. Their giant got mad and had to introduce him to the way his herd died. Haven't even gotten there and the blood does flow woohoo

Get to level 30ish and buy ebony ingots off the merchants (general goods merchants seemed to have them before the weapon/armor merchants did). Same deal with daedra hearts, get to level 30 and buy them off alchemy merchants. If you're not level 30 yet you probably don't want to get them because they'd make the game really boring as you'd be untouchable and one-shot everything pretty much.
